India is made popular not because of the Indian curry. It's a diverse country which has a rich culture all its own. Just think - one country that has more than 40 languages and has more or less 1600 dialects! Each state has its own unique culture, lifestyle and food. It is quite ironic then, that when people from other countries think about Indian cuisine, the first thing that comes into their mind is the word 'curry.' Maybe this is a huge understatement as curry dishes doesn't even begin to describe the wonderful variety that the Indian cuisine offers. Each state has its own way of cooking curry dishes, and every household vary in their preparation of the same dish. In fact, the majority of households in India have their own special Indian curry recipe, especially for the pastes and powders that they pass on from one generation to the next. The common denominator for all Indian dishes is the spices that are used, which gives them their special flavor and aroma.

1. Curry powder is the key ingredient of a curry dish. This powder is actually a blend of spices, collectively referred to as garam masala. This spice mix is added to the dish coupled with other spices to enhance their aroma and flavor.

3. Curry tastes better if you use quality and fresh ingredients. If possible, avoid commercially available mixes. It can actually be fun to experiment with the spices while following the main recipe. Of course, starting from scratch might seem intimidating if you are just starting out with cooking Indian food, but a good recipe and a grinder is all you'll need and you're good to go!
