Peeling the apple
For peeling an apple, it is most common to use a standard kitchen knife. This is not ideal as with a knife, it is difficult to peel an apple without chopping lumps of it from the apple, wasting the tasty fruit. You are perhaps better using a specially designed apple peeler for the job. This will mean the only thing you will be peeling is the skin and save as much of the apple as humanly possible. There are different kinds of apple peelers though and you don't want to pick up a low quality one that will make peeling an apple both messy and difficult. Coring the Apple
Coring an apple is quite tricky without a specifically designed tool for the job. You may have at some point used a long and thin knife to do this but these days, there are specific utensils invented for such tasks. You would push this through the apple from top to bottom, cutting free the central cylinder from the tube, including the core. You would then pull this tool back out and will have removed the core cleanly and very easily. It's a quick process and has been a great help to professional chefs and home cooks alike since it was created. Combined with a separate apple peeler, it makes the task of preparing apples for cooking, a simple job.

There are however devices created to achieve both of these tasks at the same time. An apple peeler and corer is a vice like device that you place and apple in to be cored and peeled. Once inserted, you simply turn the handle a few times and the job will be done automatically. These are a little larger and generally worktop mounted for stability. These would mostly be found in commercial kitchens that may deal with a large volume of apples on a daily basis and would warrant the space taken for such a device. They are however available for normal purchase and would possibly benefit a small catering business that is still run from home.
Summary
The best way to peel and core an apple will be different depending on your circumstances. If you are just doing it in the home perhaps for a occasional recipe or a health snack, a separate smaller apple corer and apple peeler will be sufficient. If however you work in a commercial kitchen, an all in one device would probably be best for you.
