The spiral slicer is an inexpensive tool that turns any hard cylindrical shaped vegetable into long thin ribbons that resemble the shape and consistency of real pasta. The spiral slicer can be found online and at some specialty gourmet stores.
To make low carb pasta you will need:
A spiral slicer or another similar tool called the spirooli 1 medium sized firm zucchini squash Your favorite spaghetti sauce, homemade or store bought A food processor, nutritional yeast, and pine nuts or grated Parmesan cheese
Wash and peel the zucchini squash. 1 medium zucchini squash is enough for one serving if you are making low carb spaghetti for your family use 1 squash per person. Cut the zucchini squash in half and place it on your spiral slicer and attach the lid. Set your slicer to the thin setting and with constant pressure turn the spiral slicer handle until beautiful thin angel hair like pasta strands appear. You have the choice of eating the the squash spaghetti raw or lightly steamed. If you choose to eat it raw, lightly toss it in some olive oil and add a pinch of salt and pepper. If you want to eat it steamed, put the zucchini noodles in a steamer basket and steam until tender. Don't steam them for too long or they will get soggy.
Now for the sauce, if you want to make a raw tomato sauce you can easily make one in your blender using a few ripe tomatoes, a handful of sun dried tomatoes, Italian herbs, and garlic. Blend all ingredients in a blender and you will have an amazing fresh raw tomato sauce. If you prefer, you can buy a jar of tomato sauce and heat it up on the stove. Pour the sauce over your low carb spaghetti and garnish with some grated Parmesan cheese or you can make a non dairy version of Parmesan cheese by adding 1 cup pine nuts to a food processor with 1/2 cup nutritional yeast. Process with the S blade until the pine nuts have been chopped into tiny pieces mimicking the consistency of Parmesan cheese.
