If you love spaghetti but have a gluten intolerance or are watching your carb intake, I'm going to show you how to make a healthy low carb gluten free version of spaghetti using a spiral slicer.

The spiral slicer is an inexpensive tool that turns any hard cylindrical shaped vegetable into long thin ribbons that resemble the shape and consistency of real pasta. The spiral slicer can be found online and at some specialty gourmet stores.

To make low carb pasta you will need:

A spiral slicer or another similar tool called the spirooli 1 medium sized firm zucchini squash Your favorite spaghetti sauce, homemade or store bought A food processor, nutritional yeast, and pine nuts or grated Parmesan cheese

Wash and peel the zucchini squash. 1 medium zucchini squash is enough for one serving if you are making low carb spaghetti for your family use 1 squash per person. Cut the zucchini squash in half and place it on your spiral slicer and attach the lid. Set your slicer to the thin setting and with constant pressure turn the spiral slicer handle until beautiful thin angel hair like pasta strands appear. You have the choice of eating the the squash spaghetti raw or lightly steamed. If you choose to eat it raw, lightly toss it in some olive oil and add a pinch of salt and pepper. If you want to eat it steamed, put the zucchini noodles in a steamer basket and steam until tender. Don't steam them for too long or they will get soggy.

Now for the sauce, if you want to make a raw tomato sauce you can easily make one in your blender using a few ripe tomatoes, a handful of sun dried tomatoes, Italian herbs, and garlic. Blend all ingredients in a blender and you will have an amazing fresh raw tomato sauce. If you prefer, you can buy a jar of tomato sauce and heat it up on the stove. Pour the sauce over your low carb spaghetti and garnish with some grated Parmesan cheese or you can make a non dairy version of Parmesan cheese by adding 1 cup pine nuts to a food processor with 1/2 cup nutritional yeast. Process with the S blade until the pine nuts have been chopped into tiny pieces mimicking the consistency of Parmesan cheese.

Three Easy Steps to Make Dried Fruit in Your Dehydrator

Step Three:
Inspect the fruit at half hour intervals. Rotation of the trays may be necessary to achieve uniform drying; the fruit may even need to be turned. Your manual should provide you with expected drying time, but expect the entire process to take anywhere between 8-12 hours. As you reach the end of the process, check fruits for dryness. Fruits which have been dried in a dehydrator need to be put through an additional process, prior to them being stored. They should be loosely packed in jars, and shaken daily for approximately seven days to ensure that the remaining moisture is evenly distributed between the dried pieces.

Build a Smoker Pit - You Can Do It

Building the Smoker Pit

Dig a hole in a secluded area of the yard that doesn't get much traffic. The hole should be 3x3 feet and 2-feet deep. Surround the hole with upright posts, fencing, or big rocks on three sides so people are aware it's there. The barrier doesn't have to be tall; 18 inches will be fine.

Put a 6-inch layer of sand in the bottom of the pit and level it.

Stack the cement blocks in the pit. Stack them two high -- total height will be 16 inches -- in a rectangle shape that measures on the exterior of the blocks 24x16 inches. Stack the blocks directly on top of each other. You will need 20 blocks, six for each 24-inch long side and four for each of the 16-inch long sides. There should be a gap on all four sides of the cement blocks to the wall of the pit. The gap on the 24-inch long side of the blocks to the wall of the pit will be 6 inches. The gap on the 16-inch long side will be 10 inches. Think of it as a rectangle inside a square. Since the stack is only two blocks high or 16 inches, it doesn't matter whether you use solid cement blocks or the ones with holes.

Cut a piece of wire mesh that is 26x18 inches. Lay the mesh over the cement blocks. Place a brick on each corner of the mesh to hold it in place. This mesh will support the cooking grid.

Smoking in the Smoker Pit

Remove the mesh and place a roasting pan with 4 inches of water on the sand in the center of the cement rectangle. Replace the mesh. Build a fire in the pit on the outside of the cement blocks in the 10 inch gaps between the blocks and the dirt sides of the pit. Use charcoal briquettes, natural charcoal or wood. There is no fire in the middle of the pit because that's where the pan of water is. Wait for the fire to burn down or the charcoal to be covered with gray ash. Put the meat on a grill cooking grid and then place the cooking grid on the mesh.

Add wood chunks on top of the burnt down wood or charcoal. If the chunks start to flame, spray with water until the flame goes out. Watch for a few minutes to make sure they don't flare up again. If they do, spray again. Soak the next batch of wood in water for 15 minutes first.

Place the large piece of mesh on top of the smoking pit and cover it with aluminum foil held down with rocks.

Once you have the perfect grill bought, now you must assemble it and set it up. "Wow, I thought I was done after I got it put together", you are probably saying. You can get a smoker box at any large box store in the BBQ section. It is nothing more than a cast iron box about 4X6 with a top on it. If you can't find a smoker box, I started out with a soup can that I took the label off of.

When you get things all set up, you will notice that 2/3 of the grilling area has briquettes and the other 1/3 is open. You need this area so you can zone off your cooking area. Zoning off means you can have different heat output in different areas of the grill. This comes in handy when you cook two different types of food. Steak and shrimp, veggies and meat etc are some examples.

In the smoke box I use sheddings from my maple tree soaked in water for about half an hour before you cook. You can buy chips in various wood, apple, cherry, oak, mesquite. You can soak them or not, if you do not soak them, be ready to douse the wood coals from time to time because they will catch fire and not release smoke.
